It's brown and seems to go especially well with the mushroom and when I forget to add lemon, it also lends a sour quality. That is all I know I am afraid. The ingredients are simple but essential - chicken breast of any size or thickness, flour, salt and pepper, mushroom slices, marsala wine, a lemon and parseley.
