Apple Dumpling Cake

Cloudy Sunday afternoon. Not too depressing, but not really exciting, either. Feeling sort of heavy (from drinking beer last night?), and being a little worried about the work on Monday…..
It’s not my favorite kind of Sunday afternoon, but I just can’t avoid it. When in such a mood, I need something ….. something like the sweet smell of apple and cinnamon. OK. My inner child ordered me to make Apple Dumpling Cake.

This recipe is originally from, I believe, a cookbook called "Southern Sideboards." I don’t have this book, but I got this recipe from this site last spring, and since then this has been one of my top 5 cake recipes. It’s not just because I like the taste of this cake. The site says that the author of the book is Junior League of Jackson, Mississippi, and that’s where I visited many times in the past to see my good friends.

When I make this apple dumpling cake, I use about 2/3 of the amount of sugar written in the recipe and use white sugar instead of brown sugar. I may add 2 or 3 teaspoonful of brown sugar if available. Today I put chopped apples a little more than this recipe called for, and it worked fine. I don’t have a square cake pan at the moment, so I use this (again, from the 100-yen shop, cost 200-yen, though.)

Believe me, I didn't eat that much at one time. To take this photo, I just took out some slices that didn't look good and kept them on another plate.

Talking about Jackson, Miss., I wonder if anyone is familiar with a movie called “John John in the Sky.”

This came to a small movie theater in my town about 5 years ago. I didn’t think it was a big hit, but it was a nice heart-warming story, filmed in a small town near Jackson, Mississippi.
