Tomato Stew

Tomato Stew with lots of vegs. Now it’s the busiest time of the year for me. I’m leaving for my parents’ house tomorrow afternoon, so I need to get a lot of things done before that. For that reason, my meals these days tend to be one-pot dish which is also a good “fridge-cleaning” dish. This is the perfect example. I made a huge amount of it and re-heating it over and over ;)
