Nimono (Simmered Dish)


煮物Nimono (Simmered Dish)

- 筍の土佐煮 Bamboo shoots simmered with dried bonito flakes
- しいたけ Shiitake mushroom
- そらまめ Fava beans
Bamboo shoots were simmered with and topped with dried bonito flakes. Since Kochi prefecture, called "Tosa" in ancient time, is famous for producing dried bonito, this simmered dish is called “Tosa-ni.” I simmered shiitake and beans in another pot because I didn’t want to have bonito flakes all over them.

obachan;
Its a coincidence that I bought fresh bamboo shoots at an asian market yesterday... I am going to try simmering them with bonio flakes...I'm anxious to try it..I have a difficult time finding Japanese products where I live. There are asian markets , but mostly south east asian. I have to travel to NY to find a good variety of products. Your site makes me anxious to take a trip, soon....

MrsT --- And one thing I like about simmered stuff is that you can work on something else while it's simmering... :)

carlyn --- Oh fresh bamboo shoots must be so good. We have boiled (with no seasoning ) and vacuum packed ones sold at supermarkets here and that's what I used this time. Something that professionals never do for formal kaiseki ;P How do you usually prepare fresh bamboo shoots over there? The popular way here is boiling them in the rice rinse water beforehand.

I really don't prepare fresh bamboo shoots any special way. I slice them and stir fry with other vegetables or simmer with soup. It was a fluke that I saw them at the asian market and was compelled to buy them. It was amazing that your site had simmered bamboo shoots on that next day!!!!! I followed your advice and they were very good. I shared some with my mother who also enjoyed them...Thanks
