Sea Bream Soup

Now for this kind of special meal, I didn't hesitate to use bonito flakes and top-quality kelp to make the broth, with a little shirodashi added. What’s in the bowl is a piece of sea bream, carrot cut out in the shape of a maple leaf, shimeji mushrooms, kamaboko (steamed fish cake), mitsuba leaf and yuzu rind.
