A Pinch of Salt Needed

Yogurt Banana Muffins

When I make a "healthier" version of muffins, using yogurt and vegetable oil instead of butter, I always add a pinch of salt even if the recipe does not call for it. Well, not always... because this time I didn't. I totally forgot about it.

It was a big mistake...

Yep, they were... at least, for me. You know this banana muffin recipe was ranked in the top 3 of a popular Japanese recipe site, which makes me wonder if my preference of taste is really off the wall...

BTW, "baachan" means grandma in Japanese, and I'm not quite there yet. ;)

I always put in a pinch of salt, just because the recipe tells me to. I wonder what difference it makes?

Yes, I agree, a little salt enhances flavor in sweets not just savory foods.
Your muffins look very nice. They rose uniformly and are golden brown with good looking texture.
Keep that recipe!
